I make my own Aji Dulce capones in small batches from seedless ripe chilies that I have grown at Wayland Chilies. I slowly dry the chilies to preserve the flavor and nutrition.
The Aji Dulce capones are very rare and expensive because of the manual labor required to make them.
In Brazil this chili is used to make a sweet jam. It is a key ingredient in making HallacaIn, a Venezuelan dish. In Puerto Rico it is used in many sauces, such as recaito, sofrito or mojito isleno.
