And so good for you, too -- low in calories, rich in vitamins, minerals, and dietary fiber. We grow eggplant in eager anticipation of the season's first Eggplant Parmesan, our very favorite dish!
This collection includes some of our old standbys, and some that we have added to our garden and market stand for the gorgeous panoply of colors and shapes.
Black Beauty: the classic, and justly popular, glossy purple-black
Casper: beautiful, snow-white gourmet eggplant
Goyo Kumba: stunning red African heirloom; small but flavorful
Listada de Gandia: beautiful Italian heirloom, richly colored purple with white stripes
Rosa Bianca: plump round eggplants are white with a lovely pale-purple blush
Round Mauve: deep mauve color, very early and productive
Turkish Orange: simply the most gorgeous fruit we have ever seen! Looks like a polished ornament, brilliant orange with delicate green stripes. 3" fruits are richly flavored.
Violette di Firenze: beautiful Italian heirloom, lavender with occasional white stripes.
You may purchase any of the individual varieties, the Collection of all seven, or try our Heirloom Eggplant Mix, an assortment of over 25 seeds which will include at least four of these great varieties.
