Amaranta Farm is located in the North End of Wallowa County in the far northeastern corner of Oregon. Our cold and snowy winters, dry summers, high elevation (3700 feet) and deep loess soil provide excellent growing conditions for many varieties of gourmet garlic, particularly the rich-flavored hardnecks. Although not certified organic, we follow organic guidelines and use no pesticides or herbicides in our garlic beds or in our personal vegetable garden and orchard nearby. We till the soil and plant, harvest, and clean our garlic entirely by hand. We also steward ponderosa pine forests, bunchgrass canyon slopes and wildflower meadows and are striving to improve old pastures. In the coming years, we'll expand our gourmet garlic production and may add some livestock and experiment with a few other market crops.
