Anna apple trees thrive in our Southern California orchard. Successful fruit setting requires extended hours of cool temperatures, resulting in the bountiful harvest of beautiful red and green fruit and we enjoy each year. Wanting to enjoy the apples as long as possible, we make seasonal pies, can the applesauce and cook up our apple jams. Typically, apple jams must have added moisture to cook the apples to the proper consistency for a jam. At McFadden Family Ranch, instead of covering the diced pieces with water, we use freshly brewed mint stock. The result is a lovely apple jam flavored with the light essence of spearmint. This jam is a refreshing addition to everyday flavors and we encourage its generous use on biscuits, vanilla ice cream or frozen yogurt and even as an accompaniment to lamb or pork dishes.
