Here's the secret that you should know.....Walnuts halves and pieces should be kept refrigerated, never frozen. There's an oil that escapes from a walnut once it is cracked. That's why the ones in the stores taste so bitter and have that terrible after-bite that stings your throat. Walnuts that have been sitting on the shelf for months lose their flavor because the oil in the walnut turns rancid rather quickly. We keep ours Chandler Walnuts in cold storage at a constant 40 degrees & pack them as needed insuring the best
tasting walnuts in the world. Seriously!
They are exceptionally excellent walnuts.
You'll see the chefs on television pull their walnuts right out of the freezer. Don't believe it when they recommend freezing walnuts & and then toasting them to bring back their flavor. The CotKing grows them and he knows----always refrigerate walnuts.
The "brain" nut is the best source of Omega 3's. They're excellent in salads, baking, and simply for munching.This year's crack-out yielded lots of the some sunburned walnuts.........intense heat in September compromised our beautiful walnut crop.
