Here's the secret that you should know.....Walnuts should be kept refrigerated, never frozen. There's an oil that escapes from a walnut once it is cracked. That's why the ones in the stores taste sooooo bitter and have that terrible after-bite that stings your throat. Walnuts that have been sitting on the shelf for months lose their flavor because the oil in the walnut turns rancid rather quickly. We keep our WALNUTS in cold storage at a constant 40 degrees & pack them as needed ensuring the best tasting walnuts. They'll last in your refrig for over six months and be perfectly fresh. Seriously!
We watch the cooks on television pull their walnuts right out of the freezer. Yikes! Don't believe it when they recommend freezing nuts & and then toasting them to bring back their flavor. The CotKing grows them and he knows----always refrigerate walnuts.
