The Red Wattle hog is a large, red hog with a fleshy, decorative, wattle attached to each side of its neck that has no known function. They were quite popular in the US in the 1700s, but unfortunately, as settlers moved west, the breed began to fall out of favor because settlers came into contact with breeds that boasted a higher fat content. Red Wattle hogs are known for their hardiness, foraging activity, and rapid growth rate. They adapt well to a wide range of climates, making them a good choice for consideration in outdoor or pasture-based swine production. Our family farm is located on 210 acres in Northeast Texas at the northern edge of the rolling Blackland Prairie. Our family has been involved in agriculture in Texas for over 125 years within 5 miles of our current farm. We are trying to carry on a dying tradition. We have gone from a typical, conventional Angus beef cattle and horse farm to where we are today.

Welcome to Salt of the Earth Farm. The farm is operated in Randolph Ohio by stay at home farmer mom Katrina Perzanowski Kohout with help from her loving husband and children. We raise heritage breed pigs, turkeys, ducks and chickens on pasture as nature intended. Currently, we sell at Haymaker Farm Market in Kent, Ohio as well as from the farm. Now we are connecting farmers to consumers at two Saturday (year-round) markets--one at Sunset Valley and one at Republic Square Park downtown. There is also the Wednesday (year-round) at the Triangle. These award-winning farmers' markets feature local farmers with vegetables, fruits, herbs, eggs and cheeses; kindly raised poultry, pork, beef and buffalo and goat; and beautiful flowers and plants. Also local bakers, honey, tea, juice, coffee, prepared foods and artisans.
