White Tepary bean
The Tepary plant is adapted to the dry conditions of the American southwest; it is drought-resistant and able to mature on a single irrigation or thunderstorm downpour. Both the brown and the white versions of the Tepary have a rich and nutty flavor. The beans vary in color and shape; they are oval, flattish or round and vary between a fleshly white, speckled brown, reddish-brown, or purplish-brown color. For their very small size they offer an exceptional nutritional value. While these miniature beans have a quick crop yield, they are also very difficult to harvest due to their small size and thin skins, which split open upon touch, scattering the beans.
For over 28 years now I've grown herbs, heirloom vegetable seedlings, flowering plants, perennials, shrubs, and a few types of trees (so far!). I also raise "naturally-grown" produce (formerly known as "organic" until Government intervention) as well as sell hormone-free eggs from uncaged (and very happy!) hens. (more...)
Maya's Farm is the little mouse that roars in the Phoenix food scene. With barely 7 acres under cultivation, Maya's Farm still manages to teach Phoenix shoppers and restaurant goers how local tastes. We have booths at farmers' markets, an active CSA, and a growing school garden program. (more...)
