Inchelium Red garlic
Hailing from the Colville Indian Reservation in Inchelium, Washington, this garlic is a large and beautiful artichoke variety. The dense bulb can have anywhere from 9-20 cloves and a thick outer bulb wrapper to protect the bulb. The flavor of the Inchelium Red is softly robust but not so strong as to be overwhelming; the flavor often sharpens in storage.
We started farming in the spring of 2003 on a few rented acres in Manhattan, and we farmed there through the 2007 growing season. In 2008, we were fortunate enough to start working our own ground. Today, we sell to a 150 member summer CSA, a 60 member winter CSA, 15 restaurants, the Community Food Coop, and three farmers markets in Bozeman. (more...)

Our farm, on the northeast side of Gales Creek Road, includes 9 flat acres of wonderful soil, a steep wooded hillside - the west side of Clapshaw Hill - and a riparian area with cottonwoods.
