Prepare arrowroot tubers by peeling off the papery skin under running water. Cook them by steaming, boiling, roasting, baking, or frying. They may also be dried and processed into gluten-free flour, or the starch can be extracted for use as a thickening agent in cooking. The tubers may also be planted in the ground and will yield a fresh crop in the fall. Dig anytime after the plants die back in the fall.
