Dig anytime after the plants die back in the fall. Can be grown as an annual in cold climates. Prepare arrowroot tubers by peeling off the papery skin and then steaming, boiling, roasting, baking, or frying. They may also be dried and processed into gluten-free flour, or the starch can be extracted for use as a thickening agent in cooking.
