I use Bhut Jolokia chili, also know as Ghost Chili, to infuse organic olive oil. The result is a clear amber olive oil with a toasted nutty flavor and the heat of the Bhut Jolokia. The heat does not last as long as eating a fresh chili as it it tempered by the olive oil.
This oil is delicious in stir fry, dipping oil, with pasta and a makes wonderful homemade mayonnaise and pesto.
