How to use Duck Eggs ~ Important Facts to help you Succeed

Duck eggs will last up to 3 weeks in the refrigerator.  But, there are some important facts that people don't commonly know about the quality of duck eggs.  The fresher the duck eggs the better are the results, the duck eggs are rich, delectable and delicious.  I pride myself on shipping extremely fast and fresh.

Duck eggs can be used for any number of cooking methods.  But, they must be very fresh under 7 days old to get your best results especially for poaching, frying, or hard boiling.  Older then 7 days they are still excellent in baking and recipes, but the whites are a little rubbery.

Closer to 21 days old, you need to be mindful that some duck eggs could be turning bad.  First each egg should be checked by cracking open in a small clear glass bowl.  The whites should be a clear white and no odor.  If it has started to turn bad, you will see the white is cloudy or slightly yellow in color, or it might have an off smell, meaning the odor is not like a fresh egg.

Some duck eggs do last longer then 21 days, but they should be checked over with care.

I have tripled my duck flock and expect most of them to be laying daily by November/December 2009.  This would be the only way I can ship large amounts of duck eggs and insure to the buyer that they are fresh.

Be aware that many shippers of duck eggs do not ship fresh duck eggs.  I have acquired repeat dedicated duck egg customers because according to them, I am the only one that ships duck eggs very fresh, and sad to say, in the past other shippers have sent them half bad duck eggs.

Duck Manure

Manure is not much from one or two ducks, it will fertilize the lawn or place where they live.  But with a larger group of ducks, it does accumulate, then the best thing is to compost the manure in a pile, somewhere it can rot and break down over time, about one year, then it becomes beautiful rich soil for a veggie or flower garden.

I find that ducks and chickens are part of a sustainable environment.  In that their manure as it rots becomes home for lots of bugs and microbes.  And like most birds, ducks and chickens love to eat bugs. 

But, when ducks dabble in mud puddles they are getting more Omega-3 oils,  Vitamin E, other vitamins and nutrition then Chickens or other birds, because they are really searching out microbes to eat.  All of this is very healthy and gives them better nutrition that is normally missing in their feed or in a standard diet.  This is why free-ranging duck eggs are a good idea.  (Your taste buds will tell you that duck eggs are better.)

Fresh Duck Eggs - How to know how fresh or old they really are ! ! ! !

When you get your duck eggs in the mail, they should be good for 2 to 3 weeks in the fridge. 

After 3 weeks or with older eggs, just crack them, by opening them first in a small clear glass bowl.  If the whites look clear and have no smell, then they are still good.  If the whites are just a little bit cloudy, throw them out, or if the whites are turning yellow.  I have used unrefridgerated eggs in the hot summer time 80/90 degree heat, that were 3 to 4 week old eggs, using these guide lines. 

Another method that can tell you the age of the eggs you bought, is to use a bowl filled with 4 inches of water.  Submerge the eggs in the water, one or two at a time.  If the eggs lay flat at the bottom of the water they are fresh, if the egg stands upright on the bottom then they are getting old.  If they float, throw them out, they are too old.  This is a very reliable test, because as an egg ages, the air bubble in the egg grows larger.

Years ago, before I had my own ducks, a friend gave me a large basket full of eggs of various ages, from their 4 pet ducks.  I was able to figure out which ones were good and which were bad.  I hard boiled the good ones and made some wonderful egg salad.

When you get any new eggs, always examine them for any cracks.  It's best not to use cracked eggs.  But, they can be a great treat for your dog or cat.  I open them and check to see if their is no smell and then fry them up to add to their food.
