Another flavorful vegetarian dinner that complies with the “Eat real food. Mostly plants.” message.  Serve it with polenta or your favorite cornbread and braised greens.  That’s a good meal.

 

 
 

Braised Greens

Braising is a tasty way to cook fresh, local seasonal dark leafy greens.  Every time I cut some kale from my backyard, I am thankful that I live in a house that has a yard big enough to grow a few greens and a climate that sustains them all winter. Yum.
