Today was the first day of our CSA and all I could think of was what am I going to do with these purple top, red stem, and white turnips? I'm not a turnip fan and I have to find a way to make them palatable for our members. Last night I created a cilantro dressing that I really liked and although everyone said it was delicious, I knew how much mayo I had put in it. Now I had 2 dilemas. How do I make this salad dressing less lethal and how do I use these turnips? How about throwing the two projects together? I did and the following recipe is the new creation. It tastes great and is about 1/100th the calories of the original recipe. I tried it on salad greens, dipped carrots and kholrabi in it and put it on my pasta. It's fresh and I didn't feel like I was eating low-cal fake food. You can play with the amount of lemon juice and chili flakes so that it tastes just right for you. Hope you like it.
If there are any weight watcher fans out there, you might be interested to know that a whole cup of this stuff is only 3 points. 2 tbsps of bottled ranch dressing is 5 pts!
Si! Cilantro Salad Dressing
ingredients:
1 bunch cilantro
2 cloves of garlic
salt, pepper, and chili flakes to taste
juice from 2 small lemons
2 heaping tbsps non fat sour cream
1 tbsp mayo
and the secret ingredient....3 medium sized cooked turnips
Now for the easy part..put all ingredients in the blender and blend on high.
