Recipe Wednesday at the Bluegrass Farmers' Market!

And, we are talking green beans! Which, by the way do not really have to be green in color...try the yellow or purple beans too. I do have to admit that the first time I prepared the purple beans, I was a bit disappointed to find that they do not stay purple. The great part is they are still loaded with flavor!


I have to admit that folks are adamant about their choice of green bean varieties. I love Jade beans because I am sauteing queen when it comes to veggies...I love them crisp tender. Now, my hubby is a true southerner...he wants a big old ham hock and taters in his green beans and he wants them simmered for hours but only after I have spent an hour getting the strings out and snapping them. It doesn't matter which you prefer, green beans are in season and there is a variety for everyone, just talk to your farmer for suggestions. At the Bluegrass Farmers' Market, we can guarantee that the farmer grew those green beans!!!


Here are a few recipes that customers gave me for everyone to try.


Beans Onions'n Maters


2 lb green beans, snapped (or left whole) and cooked until tender...you can steam some varieties!

2 tablespoons olive oil

1 medium onion, diced

1/2 teaspoon garlic powder...or use fresh minced garlic!

2 medium tomatoes, peeled and diced

salt and pepper to taste


Once beans have been cooked, drain and set aside. In a large skillet, heat olive oil over medium heat and saute' onions until translucent. Add garlic and tomatoes...heat through. Add green beans and toss, cooking until just heated. Salt and Pepper to taste.


BBB

Basil, Butter and Beans


4 cups fresh green beans, snapped into 2” pieces

1/4 cup onion, chopped

1/4 cup celery, chopped

1/2 cup water

2 tablespoons butter, melted

2 tablespoons fresh basil, minced

Salt and pepper to taste


Simmer green beans, onion, celery and water in a covered skillet for about 5 minutes or until beans are tender. Once tender, drain and return to the skillet along with the butter, basil, salt and pepper...toss to coat and heat through.


And, I couldn't help but share this recipe that I found because it sounds soooooo wonderful! Yes, I am drooling and can't wait to get to the market on Saturday and buy some beans, basil and taters to try this one!!!

Recipe Wednesday at the Bluegrass Farmers' Market


And, we're talking about a variety of market goodies today! Virgil Clark, from Clark Farm in Garrard County, shared some of his favorite summer time recipes. And, so did one of our new customers who enjoys the Recipe Wednesday and shared one of her favorites too!


Let's start with the wonderful “cuke” and Virgil's recipe for...



Cucumber Dip/Dressing


3 Medium cukes, peeled and sliced thin (I like pickle cukes for this)

3 Tablespoons red wine vinegar

3 Tablespoons sugar

3 Tablespoons sour cream


Mix the vinegar, sugar and sour cream in a mixing bowl, then add cukes and mix well. Put in a covered bowl and refrigerate for at least one hour before serving.


Note: You can add a few slices of Candy onion also.



Speaking of Candy onions, here is another one from Virgil...


Grilled steamed onions


1 med/lg sweet onion per serving

1 beef flavor boullion cube per onion

Dab of butter for each onion


Peel onion, then take a melon baller or teaspoon and cut a hole in the top center of each onion large enough to hold the bullion cube. Then slice 6 or 8 slits around the top of the onion about an inch deep. Next place a boullion cube in each cavity and fill with butter, then wrap in aluminum foil, sealing tight to keep in the melted butter/boullion mixture, then place on the grill on medium heat for 30 minutes or until the onion is tender when squeezed. Serve in the foil packed to retain the juice.

Note: They can also be cooked in the microwave, but you must wrap in plastic wrap and cook for about 10 minutes.


One more from Virgil, he's sharing a favorite cabbage recipe while there is still plenty available at the market!



Ramen Cabbage Salad


1/2 large head cabbage, coarsely chopped

1 (3 ounce) package ramen noodles, crushed

1/2 cup sunflower seeds/almond slivers

1/2 cup vegetable oil

3 tablespoons white sugar

3 tablespoons distilled white vinegar

1/2 cup diced cranberries


Directions:


1. Toss together the cabbage, noodles, cranberries and sunflower

seeds/almonds.

2. Whisk together the ramen flavor packet, oil, sugar and vinegar, Pour over

cabbage mixture and toss evenly to coat.


Our next recipe and comment comes from our new customer...Julianne! I hope she does not mind me sharing with all of you.



And the blog with recipes is wonderful. I saw the squash recipes for fried, sliced squash. I dust slices with flour (with salt and pepper). Then dip in egg white and then panko. Spray with spray oil on both sides. Bake at 450 until crisp--turning in the middle, Delicious and veeeery healthy.”

Recipe Wednesday at the Bluegrass Farmers' Market!

Today we are talking squash! And I mean any variety...yellow, crook neck, Zephyr, zucchini, etc. Be creative and mix them up. Squash is always wonderful steamed, stuffed, grilled and pickled. Here are a few simple and easy recipes to try with any of the squash varieties available at the Bluegrass Farmers' Market...enjoy!



Squash Puppies


3 medium squash, thinly sliced

3 eggs, well beaten

1 cup self-rising cornmeal

1 tsp onion powder

1 tsp garlic powder

1 cup vegetable oil

salt and pepper to taste


Mix onion and garlic powders into the cornmeal. Dip squash into beaten eggs, then into the cornmeal mix. Pan fry in a skillet with preheated oil until golden brown. Salt and pepper to taste.


Simple Skillet Squash and Onion


2 pounds squash, any variety

1 medium onion, finely chopped

1/2 teaspoon salt

2 teaspoon sugar

1/2 cup water

2 tablespoons butter


Wash squash, pat dry and cut into 1” slices. Place in a skillet with onion, salt, sugar and water. Cover tightly and “steam” about 10 minutes. Remove lid and add butter...stir gently.


Marinated Squash Salad


2 small yellow squash

1 small zucchini

1 medium onion

1 green bell pepper

2-3 radishes

1/2 cup apple cider vinegar

1/3 cup sugar

1 teaspoon celery seed

salt and pepper to taste


Slice the first five ingredients into thin slices. Mix the remaining ingredients and pour over sliced vegetables. Cover, refrigerate for 12 to 24 hours. Stir before serving. This will keep up to 10 days in the fridge! :)

Celebrate the American Farmer at the Bluegrass Farmers' Market!

It's the weekend before the 4th of July and certainly a time to celebrate the reason it's a holiday. The 4th is also known as Independence Day in commemoration of the the signing of the Declaration of Independence. I can't think of a more independent group of people than American farmers. They work the soil, they put their sweat and equity into making sure that the people of our United States of America get to enjoy the wholesome goodness that their hours of dedication provide. So, on this Independence Day weekend, we celebrate the privilege of being able to provide only the very best locally grown fruits and vegetables for your 4th of July picnic! :)

Recipe Wednesday at the Bluegrass Farmers' Market!

We're talking potatoes! I mean fresh from the garden potatoes. Store bought cannot compare with the ones available at the Bluegrass Farmers' Market.


Okay, you have purchased your spuds, taters...whatever you call them and now, what to do with them. You can simply steam them and toss with a bit of butter, salt and pepper. Try frying them in some bacon drippings. Just throw a few in with your green beans. Or, you can get creative and try a new potato salad recipe using some of the seasonings available at the Herb'n Renewal booth.


Here are a few of their favorites...


CAJUN POTATO SALAD


5 LBS POTATOES

1/2 CUP RED BELL PEPPER, DICED

1/2 CUP GREEN BELL PEPPER, DICED

1/2 CUP GREEN ONION, SLICED

1/2 CUP PURPLE ONION, DICED

1 CUP CELERY, DICED

3 HARD BOILED EGGS, CHOPPED

2 1/2 CUPS MAYONNAISE

1/4 CUP PICKLE RELISH (OPTIONAL)

1 1/2 TBSP. DIJON MUSTARD

2 TBSP. CAJUN WING'N SEASON

SALT TO TASTE


COOK POTATOES (PEELED OR WITH SKINS LEFT ON). CUT INTO CHUNKS AND SET ASIDE. MIX MAYONNAISE, MUSTARD, CAJUN WING'N SEASON AND RELISH. MIX WITH REMAINING INGREDIENTS, EXCEPT POTATOES. TOSS MIXTURE WITH WARM POTATOES. SALT TO TASTE AND CHILL OVERNIGHT.


HERB'N DILL POTATO SALAD


2 LBS NEW POTATOES, CUBED 1/2”

1 RIB CELERY, DICED

2 TBSP. MILD BANANA PEPPER RINGS, DICED

1/4 CUP PURPLE ONION, DICED

3 HARD BOILED EGGS, CHOPPED

1 CUP MAYONNAISE

1 TBSP. HERB'N DILL

1 1/2 TSP. SALT

1 TSP. BLACK PEPPER


BOIL POTATOES FRO 15 MINUTES OR UNTIL JUST FORK TENDER; DRAIN AND LET COOL 15 – 20 MINUTES. COMBINE POTATOES WITH THE NEXT 4 INGREDIENTS. IN A SEPERATE BOWL, MIX REMAINING INGREDIENTS. COMBINE MIXTURE WITH THE POTATOES, COVER AND REFRIGERATE OVERNIGHT...STIRRING 1 OR 2 TIMES TO BLEND.


COWBOY FRIED TATERS


1/4 CUP VEGETABLE OIL

2 LB. TATERS, CUBED 1/2"

3 CARROTS, CUBED 1/2"

2 TBSP. HERB'N COWBOY

1 CUP ONION, DICED

¾ CUP GREEN PEPPERS, DICED


IN A LARGE SKILLET HEAT OIL OVER MEDIUM HIGH HEAT. ADD POTATOES & CARROTS...GIVE THEM A STIR AND THEN COVER. COOK FOR APPROXIMATELY 20 MINUTES OR UNTIL FORK TENDER...GIVE THEM AN OCCASIONAL STIR AND FLIP! REMOVE COVER AND STIR IN THE HERB'N COWBOY, ONION AND PEPPERS. CONTINUE COOKING...GIVING THEM AN OCCASIONAL STIR AND FLIP FOR 10 - 15 MINUTES.


YOU CAN SPEED UP THE COOKING TIME BY PAR BOILING THE POTATOES AND CARROTS UNTIL FORK TENDER. DRAIN AND COOL THEM A BIT BEFORE CONTINUING WITH THE RECIPE.

It's Recipe Wednesday at the Bluegrass Farmers' Market!

 And, we're talking cauliflower!


I cannot believe that I am saying that. You know how there is at least one food item in the world that you hate...no matter how many times you try it, no matter how many different ways it is prepared...you still hate it. Well, for me that is cauliflower!


I can remember my mom baking this big hunk of white vegetable stuffed with a sausage concoction and smothered in a cheese sauce in hopes that I would eat it. NOPE! In my opinion, there is nothing that would ever make that stuff taste good. Thank heavens for farmers, I am not the norm. lol I keep watching shoppers leave the market with at least one head of cauliflower each Saturday. They must know something that I have missed! So, I went on a search for some recipes to share. Who knows, I might even try one...maybe, maybe not!


I love broccoli, so this might be the one I try. :)


Cauliflower Broccoli Salad


1 head cauliflower, cored and broken into pieces

1 head broccoli, broken into florets

1 bunch green onions (6-8) chopped fine

1 cup mayonnaise

1 cup sour cream

1 1/2 teaspoons garlic salt (I would use chopped garlic scapes!)


Mix together and let marinate in the fridge overnight.


This one has bacon...now we are talking!


Cauliflower Bacon Salad


1 head cauliflower, broken into florets

1 small head iceberg lettuce, shredded ( use the Black Seeded Simpson available at market)

1 lb. Bacon, cooked and crumbled

2 – 3 tablespoons sugar

1/4 cup grated Parmesan cheese

1 cup mayonnaise


Layer in a bowl...in order. Cover with plastic wrap and chill overnight. Toss lightly before serving.


The only other thing that could make cauliflower taste great would be cheese!


Cauliflower and Basic Cheese Sauce


1/4 cup butter

1/4 cup flour

1/2 teaspoon salt

pinch cayenne pepper

1/8 teaspoon dry mustard

2 cups milk

1 cup Cheddar cheese, shredded

steamed cauliflower


Melt butter in saucepan, add flour, salt, cayenne and mustard. Stir until blended. Slowly add milk and cook stirring constantly until thickened. Slowly stir in cheese and heat, stirring constantly until smooth. Pour over steamed cauliflower!


I will report back if I tried any of these...maybe I'll just skip the cauliflower and eat the broccoli, bacon and cheese! Lol

Kudos for a Bluegrass Farmers' Market member!

It's always a joy to be able to spread the news about one of our farmers. A young one too! The Bluegrass Farmers' Market is proud to have Coleman and Callaway Stivers as members. Anyone who shops at our Richmond Rd. location will recognize these two young brothers...they are always smiling! :)


The older brother is very quiet and reserved. The younger brother is jovial and talkative...we affectionately call him “Farmer Bieber” because he is a Justin Bieber lookalike! Very different personalities. They are both welcome additions to our market and our customers know it. BTW, did I mention that they are both teenagers!!!


At the market on Saturday their proud grandfather told me about some recent accomplishments for Coleman.


2nd place in FFA state competition public speaking...his topic “Locavore, to be or not to be!”


2nd place in the FFA regional vegetable production!


1st place in the FFA regional agricultural processing for his honey!


1st place FFA state agricultural entrepreneur!


He was also selected to be one of the Kentucky Governor's Scholars this year!


Coleman is currently the President of the Locust Trace FFA.


For a quiet young man he sure has accomplished a bunch and we are all very proud of him.


While Coleman is participating in the Kentucky Governor's Scholars Program, Callaway will be minding their booth at the market. Come visit him on Saturday at the Richmond Rd. market.

 
 

Sunny Saturday at the Bluegrass Farmers' Market!

This is a very special weekend at the Bluegrass Farmers' Market. We'll be celebrating the dads in our lives and the opening of a second market location!


First and foremost...dad! Sunday is his special day, so why not treat him to an extra special day of great foods. Start the day off with farm fresh eggs, bacon, fried taters and sweet sliced strawberries or black raspberries. Lunch could be a wonderful crisp salad with crunchy lettuce, radishes, cucumbers, tomatoes and onions topped with a honey vinaigrette dressing and a slice of zucchini, apple'n oat thingies on the side. Dinner could be prepared on the grill with perfectly seasoned beef, pork, chicken, goat or lamb. Grill some zucchini or yellow squash, cauliflower or cabbage, steam some green beans...the choices are endless. Don't forget to treat dad to a bouquet of beautiful flowers...yes, men love them too! Finish the day off with a slice of chocolate zucchini cake topped with ice cream. Sorry, you'll have to go somewhere else for the ice cream but the Bluegrass Farmers' Market can supply you with everything else. :) If you want to surprise dad with a wrapped up gift...how about some he-man scented soap or a jar of pepper jam or a bag of herb seasoning! How about treating him to an herb plant...and, planting it for him. I promise, our farmers can make dad feel special!


Now on to the next special news...we now have a second market location! Starting this Saturday you'll be able to find some of us in the Stonewall Center on Clays Mill Rd.! We'll be set up in front of Another Man's Treasure from 9 until 2. We'll be there on Thursday from 3 until 6! Come visit us in our second location. :)

Recipe Wednesday at the Bluegrass Farmers' Market!

One of my favorite spring treats was a little slow making an appearance this year. But, take my word for it, the strawberries were worth the wait! And, chances are you were nibbling on them as you drove home from the market. :)


I have to admit that I am sort of a purist when it comes to strawberries. I like them plain or with a just a wee bit of something else. For instance, I love them dipped in sour cream and rolled in Sugar In The Raw. Love them sliced on my morning oatmeal. Drool when I see them in a bowl with cream. See what I mean...I love strawberries in all of their red ripeness! :)


Wednesday is recipe day so I thought I had better search and see how other folks enjoy their strawberries. Boy oh boy, did I ever find a site with a bunch of recipes! I believe I might even have to try the cucumber strawberry salad!

Saturday is Info Day at the Bluegrass Farmers' Market!

Saturday is our Market Info Day!


So, what the heck is a market info day? It's a day to learn, become informed or get the answers to questions about the market.


10am – 12pm We'll have a representative from the Kentucky State WIC/SrFMNP program to answer all of your questions about the various programs that folks can take advantage of at farmers markets. The Nutrition Service Team Leader for the WIC Program at the Lexington-Fayette County Health Department will also be on hand to answer questions. You might be surprised to find that you might qualify for a sponsored farmers market program.


9am – 1pm Have you ever wanted to can, freeze, dehydrate or preserve items that are only in season for a short time? Imagine being able to enjoy strawberries, asparagus, etc. all winter long. Well, we'll have a gal who will explain the various ways to “put food by” as my granny used to say. She can help you decide what method would be best for your lifestyle.
