Home Farm Herbery’s Natural Red Velvet Cake

Makes two 9-inch cakes or 24 cupcakes 

Ingredients 

2-1/2 cups cake flour
3 tbsp. NATURAL cocoa powder (not Dutch processed or dark)
1 tsp. salt
2 tsp. baking powder
1 tsp. cream of tartar
1 cup butter
1 tbsp. vanilla extract
2-1/2 cups white sugar
4 eggs
1/2 cup buttermilk
1/2 cup plain yogurt
1/2 cup to 1 cup  beet puree (from Home Farm Herbery Natural Beet Powder
(Just add a few tablespoons of water to the beet powder to make the puree)
1/2 cup raspberry juice (from frozen or fresh raspberries)  
2 tbsp. white vinegar
2 tbsp. lemon juice

Directions

Preheat oven to 350 F Grease two 9-inch cake pans and line the bottom with parchment paper OR line cupcake tins with paper liners.

Prepare beet puree and raspberry juice beforehand. For the raspberry juice, heat up raspberries in microwave until they become mushy. Strain to remove seeds.

Sift together dry ingredients and set aside.

Cream together butter, vanilla, and sugar.

Beat in eggs, one at a time.

In a separate bowl, mix together the buttermilk and yogurt. Whisk in the beet puree and the raspberry juice. Stir in the vinegar and lemon juice.

Alternate adding the dry and wet ingredients to the butter/egg mixture, mixing until combined.
Pour batter into the prepared tins. Bake cakes for 25-35 min (18-22 for cupcakes) or until toothpick comes out clean.
Allow to cool 10 minutes in the pan, and then completely on a wire rack.
Decorate with cream cheese icing.

You can make cupcakes, whoopie pies, roll or log, cakes.  You can use our all natural beet powder to color eggs at Easter time or as a natural dye.

How to use our Sun Dried Tomatoes

Sun Dried Tomatoes (All Natural)
One of the things we love to do in the Home Farm Herbery Creativity Center Kitchen is to create our famous Sun Dried Tomatoes and when we do we are left with the best gourmet Sun Dried Tomatoes that have a sweet, distinctive and tangy taste and aroma. 

Our sun-dried tomatoes are a great staple to give a quick flavor boost to recipes, but you will need to first reconstitute them.

 Here's how:
Place sun-dried tomatoes in heat-proof bowl.
Completely cover with boiling water.
Let sit for 30 minutes until soft and pliable.
Drain and pat dry.

Tips:
Reserve the soaking liquid to use in soups and sauces.
Refrigerate and use leftovers within three days or cover with oil and refrigerate and use within two weeks.
To reconstitute in oil, simply cover with a good-grade olive oil for 24 hours before using
Sun-dried tomato oil may be reserved to use in salad.

Carrot, Paris Market AKA (Daucus carota) is a Nineteenth-century French heirloom. We really love these early round red-orange carrots, 1-2 inches in diameter, uniform and very sweet. This carrot does well in shallow or rocky soil and it can also be grown in containers! It is highly sought after by gourmet restaurants and a great seller at markets. 50-68 days.

Sow seeds outdoors 3-4 weeks before last spring frost or as soon as soil can be worked. Tamp soil firmly; keep bed moist until emergence. Germination is slow and uneven, so be patient. Using spun polyester row covers may improve germination rates.

Carrot Scarlet Nantes AKA (Daucus carota) (aka Early Coreless) Dates to the 1850s; original seed developed by Vilmorin in France. Cylindrical roots are 7 inch long with blunt tips. Fine-grained bright red-orange flesh is nearly coreless. It has great flavor, sweet and brittle. Good when used as baby carrots and it is excellent for freezing and juicing. This carrot is widely adapted and stores well.  Matures in 65-75 days.

We love this Beet and we are sharing a little of its heirloom history with you. (Beta vulgaris) is an heirloom from 1892. Original selections were made from Early Blood Turnip by Mr. Reeves of Port Hope, Ontario Canada. Nearly round blood-red 3" diameter roots. This beet is great for canning and fresh eating. We love this prolific beet at Home Farm Herbery as it is a good keeper. 60-65 days to maturity.
