Everything you wanted to know about Lemon Grass order some today

Lemon Grass, Dried, Organic

At Home Farm Herbery each year we plant enough Lemon Grass for our favorite customers needs.  Lemon Grass is also known as Lemongrass, Barbed Wire Grass, Silky Heads, Citronella Grass, Camel's Hay or Cochin Grass and our Lemon Grass has a  pleasant, lemony taste and aroma with subtle with ginger undertones

Ingredients: Organic Lemon Grass Dried

Lemon Grass is used to add a citrus-like aroma and fresh ginger-like flavor to marinades for poultry and fish or as a flavoring for soups, stews, salads, and food dressings such as curries or marinades. Unless the Lemon Grass is minced and mixed into the food dish, it is best to add larger strips to the dish and then remove before serving, since it does not break up and disappear when cooking.  You can use it in Thai cuisine, rice, soups, curry, beef, salad, chicken, vegetables and stir fry and it is great when you add it to rice just before cooking.

Lemongrass is also thought to have numerous health benefits, especially when used in combination with other Thai spices such as garlic, fresh chilies, and coriander. In fact, scientists are now studying Thailand's favorite soup: Tom Yum Kung, which contains all of these herbs and spices, with lemongrass as the key player. Tom Yum is thought to be capable of combating colds, flu, and even some cancers.

1 oz. Sampler   $4.95     all orders are shipped free and all orders come with a free herb or herb blend of our choice.  Plus we will include a free recipe for Tom Yum Soup!

Lemon Balm Medicinal

Lemon Balm Medicinal Organic cut and sifted

Our Home Farm Herbery Lemon Balm is a wonderful healing herb, but it also makes a great culinary herb. Lemon balm has been used as a both a culinary herb and medicinal herb since the 1500's.

Medicinal uses: The crushed leaves, when rubbed on the skin, are used as a repellant for mosquitoes. Lemon balm is also used medicinally as an herbal tea, or in extract form. It is claimed to have antibacterial and antiviral properties (it is effective against herpes simplex).Lemon balm extract was identified as a potent in vitro inhibitor of GABA transaminase, which explains anxiolytic effects. The major compound responsible for GABA transaminase inhibition activity in lemon balm was then found to be rosmarinic acid. Lemon balm and preparations thereof also have been shown to improve mood and mental performance. *These statements have not been evaluated by the FDA.

Grilled BBQ Chicken Pizza Recipe

Serves: 4 Adults Time: 30 Minutes

Ingredients:

Semolina flour

2 pizza crusts split into 4 mini pizzas*

2 cups cooked, shredded chicken

1/4 cup BBQ sauce per pizza

2 cups shredded mozzarella cheese

Method:

Prepare your toppings and get them all ready to go outside near the grill. Place them in easy to get bowls and containers. You will want to move quickly so have them all ready. It's easy to carry them out there in a cookie sheet or large melt-proof platter.

On a separate upturned cookie sheet, or pizza peel, spread semolina across the surface to create a non-stick surface. Divide your dough into four portions and press out into mini pizza shapes, about 1/4 inch thick. Keeping them mini-sized helps make them much more manageable on the grill for a beginner.

Grease your grill grates. Heat your grill up to medium to medium-high heat, around 400-425 degrees. Place your pizza crusts on the hot grill by turning the cookie sheet over on to the grill. The pizza crusts should slide off.

Close the lid on the grill and cook for 2-4 minutes until the crust is golden and has dark grill marks on the bottom. Use a spatula and tongs to carefully turn the crusts over and cook a quick minute or so to harden the bottom crust.

Remove the pizzas from the grills to your waiting cookie sheets. Add the BBQ sauce, chicken, pizza seasoning mix and mozzarella cheese to each pizza. Then carefully return the pizzas back to the grill to continue cooking.

Close the lids and cook an additional 4-6 minutes until the toppings are hot, the cheese is melted and the bottom crust is crispy and golden.

Remove the pizzas from the grill and serve immediately. Enjoy!

Use your favorite pizza crust recipe, box mix, or frozen loaf.

Tips on making essential oils from your garden herbs

Three Essential Tips for Success

The process of preserving herbs as aromatic oils is called infusion because the herbs are treated so that their herbal essences “infuse” the oil in which they are immersed.  For this reason essential oils are often called herbal infusions.

Pay careful attention to the three important tips below when you make your infused oils.  If you do then preserving your herbs in the way described will produce really high quality herbal infusions:

Use a good-quality, mild-flavored oil such as sunflower oil. You don’t want the taste of the oil to compete with the flavor and smell of your herbs. For this reason you should avoid using extra virgin olive oil

Cover you herbs completely with oil during the infusing process. Any bits sticking out will oxidize and spoil the flavor of the oil

Before storing the oil make sure you have removed all the plant material. If you don’t the oil will become cloudy and sour.

Recommended herbs are: marjoram,

and  Rosemary

If you want to make essential oils for cooking, you can use basil.

Spices to use: Cinnamon,

 Cloves,

Cumin and nutmeg (grated) are the best for homemade oils. Use a pestle or mortar to crush them before adding them to oil.

Citrus to use: The zest of citrus fruits can be used to make homemade essential oils. Use them sparingly in mixtures. About 2-3 strips of zest per bottle.

Home Farm Herbery offers organic, chemical free Lemon Verbena Leaf. Buy some now.

Lemon Verbena leaf

Home Farm Herbery is warm enough to grow Lemon Verbena and it is a large and bushy perennial shrub. It is deciduous and highly scented, with a strong citrus aroma that can be noticed most strongly in the early evening. Lemon verbena is known for its ability to "calm tension, refresh and relax.
These dried leaves make an excellent tea, but because it can be so relaxing, it is recommended to not drink and drive.  Lemon verbena matches perfectly with poultry and seafood. For poultry, try rubbing a little into the cavity or add a tbsp. to poultry seasoning for some extra zing. Sprinkle on seafood or add to a marinade for a bright vibrant flavor. Additionally, lemon verbena pairs nicely with fatty meats like pork or duck. Try adding some to your next soup or stew.

Also adds great flavor desserts, drinks and salads. You can use lemon verbena in place of lemon zest in recipes. Bury 6 lemon verbena leaves in a cup of sugar that has been placed in a covered jar or container. Use this sugar to top muffins, fruit, or sprinkle on the top of muffin batter before baking.
