2 lb beets, tops cut to one inch
2 T butter
2 ½ T maple syrup
1 ½ T freshly grated horseradish
2 ½ T apple cider vinegar
½ t salt
? t freshly ground black pepper
- Preheat oven to 400°F. Wrap whole beets in aluminum foil and roast for about 1 hour, or until tender. Remove from oven and allow to cool until easy to handle. Peel and cut each beet into eight wedges
- Melt butter in a large, heavy skillet. Stir in maple syrup, horseradish, vinegar, salt and pepper.
- Add beet wedges and bring to a boil, stirring frequently to coat beets. When liquid had reduced to about ¼ C remove from heat.
