Brown Rice Pudding

Ingredients:
1/3 cup
raw honey
3/4 cup heavy cream
1 cup Greek yogurt
1-2/3 cups Water
2/3 cup brown rice
2 large eggs
1/4 teaspoon salt
Cinnamon sugar blend

Directions:

  1. In saucepan, bring water to a boil add in rice and cover. Reduce heat to medium- low and simmer until rice is tender for about 30 minutes.
  2. Beat together eggs, honey, salt and milk. Stir in yogurt and hot rice.
  3. Pour into 1-quart baking dish. Sprinkle with cinnamon sugar blend. Set dish water bath.
  4. Bake at 350°F, 50 minutes or until barely set. Cool. Top each serving with desired honey cream.
