Maple Banana Bread

This is a low calorie version of Maple Banana bread. We have substituted apple sauce for butter and low fat milk for regular milk.

Ingredients:

½ C Maple Syrup
½ C apple sauce
2 ripe bananas
1 egg
2-inches of scraped vanilla bean or ½ tsp vanilla extract
2 C all-purpose flour
3 T  skim milk
½ t baking powder
1 t baking soda

Topping:

3 T sugar or Demerara sugar
¼ C chopped walnuts

Directions:
  1. Preheat oven to 350°F. Butter a 5x9 loaf pan
  2. Stir maple syrup and melted butter together in a large bowl. Mix in bananas and egg, a few banana chunks will remain. Add vanilla and milk, stir to combine
  3. In a separate bowl combine flour, baking powder and baking soda
  4. Stir flour and banana mixture until moist, do not over mix
  5. Transfer to loaf pan. Mix walnuts and sugar, scatter evenly over batter.
  6. Bake 50 minutes or until a knife inserted in the center comes out clean.
