8 tart apples, cored and cut into wedges
2 T lemon juice
¾ C maple syrup
¼ C butter
½ t cinnamon
1/3 t ginger
4-inches of scraped vanilla bean or 1 tsp vanilla extract*
1/3 C chopped pecans (optional)
- Preheat oven to 350°f
- Toss apples in lemon juice
- Combine syrup, butter, cinnamon, ginger and vanilla in small saucepan. Heat until butter is melted, stirring occasionally.
- Pour over apples and pecans, tossing to coat.
- Pour apple mixture into 9 x 9 baking dish, cover with foil and bake until apples are soft, about 12 minutes
