Bossa's edible rind has been washed with brine while it ages, developing into a beautiful orange rind that gives this cheese its distinctive flavor and aroma. When fully ripe it has a nutty, meaty and musky flavor. The texture is firm, becoming slightly softer as it ages. In mid-summer and fall, Bossa softens to a creamy consistency at its peak of ripeness. Pairs beautifully with dessert wines.
