Our Cascade Hops are grown, harvested, dried and packaged all on our six acre farm. We have a small hop yard and drying space, so we hand harvest only the ripe cones (hop flowers), from August to September. Our hops are dried in the dark without heat to help preserve the acid content of the cones, ensuring a quality product. We use heat sealed mylar bags which are then stored in a deep freeze to help maintain freshness.
The 2013 harvest from our 2nd year rhizomes are available in 1oz. bags - just right for the home brew! (Note: Most home brew recipes that brew around 5 gallons need anywhere from 1oz. to 8 oz. of hops, but be sure and check your recipe.)
Cascade hops are generally used as "dual purpose" for both aroma and bittering. The acid content is generally between 4.5% and 8.0%, with a spicy floral aroma and hints of citrus. While we were picking them, I always craved a beer!
