Our farm has been in the family since 1895, and we have been raising all natural grass fed/grass finished beef since 1995. Our cattle fatten on lush, grass-legume pastures through the growing season, and are generally butchered in the fall. Our beef is custom butchered at a small, government-inspected facility to our specifications, and is dry-aged for 14-21 days. This results in lean, wholesome, tender, and tasty beef with all the health benefits that grass feeding produces. Many people have told us it's the best beef they've ever tasted! Beef is available frozen in 1/2s and split 1/2s. Pricing is based on the hanging weight of the beef carcass, and was 3.30 per lb.of carcass weight last fall, plus the processing fee charged by the butcher, which is approximately .80 per lb.additional (depending upon individual cutting order). Since there are losses from cutting & trimming the carcass, expect the final cost of the meat you put into your freezer (roasts, steaks, extra lean ground beef, etc.) to average between $ 5.75 and $ 6.00 per lb.
Due to the unprecedented increase in beef prices the past few months, we will be forced to increase prices for our fall 2014 harvest. At this point, we anticipate 2014 prices will be from 15-20% higher than 2013 prices.
