I could write a dissertation about how we start our mushrooms by cutting hardwood trees into logs, the whole inoculation process, blah blah blah. However, if you are interested in that part of the process, you need to come to one of our Shiitake Mushroom Log Inoculation Workshops listed on the 2009 February & March LocalHarvest calendar.
If you have never eaten a Shiitake mushroom picked right off the log, you have not experienced "FRESH". The quality and taste is exquisite -- far superior to what you find at the grocery store or market (unless you come to the Lexington Farmer's Market at the Depot).
We select the right mushrooms for drying, dehydrate and vacuum-seal them promptly to hold in that fresh taste. As long as the seal holds, the freshness holds. If the seal should break (a pinhole could do it) simply use right away or store in the refrigerator for up to 2 weeks.
When ready to use, rehydrate according to the directions on the package....it takes just minutes. The 2.4 ounces rehydrates to about 1/2 pound or more. You can throw them in a stew, sauce (with wine is good) or a stir fry straight from the package. Our best customers keep discovering new recipes to share with us, and I'm certain you will, too!
