Duck eggs are delicious! A gourmet treat for everyone, and a great alternative for those who are allergic to chicken eggs!
We are committed to helping conserve heritage breeds. Consulting the American Livestock Breed Conservancy's list of imperiled breeds, for our first ducks we chose Khaki Campbells, an excellent layer breed developed by an Englishwoman in the 1880s. We have now added Cayuga, Black Runner, Blue Swedish, Welsh Harlequin, Silver Appleyard, and Magpie ducks, all listed as priority breeds for conservation.
From these different breeds, we get white, gray, and green eggs, which create a beautiful palate of colors!
The ducks free-range all day, with frequent visits from "The Lady" who brings them greens & vegetables when these cannot be found in the garden. Like our chickens, the ducks have free range of pasture with access to a stream and pond. They forage for much of their food and eat a natural, varied diet.
We continue to research ways to make these eggs maximally nutritious, and we now specially supplement with flax seed and purslane to enhance Omega-3 content, kelp for trace minerals, and a tonic of warm water with apple cider vinegar in the winter.
The ducks' jobs are insect control, egg production, and keeping us entertained. We do not eat them, just the eggs!
