Our chocolate candy-making workshops are some of our most popular, and it's been a while since we've given any! Almost everybody loves to get a gift of homemade candy or be able to whip up a batch of something incredible for family or guests when they're visiting.
Chocolate Truffles can feel daunting to make without an experienced guiding hand to help you. This workshop sees that you go home with those skills.
We start with an introduction to chocolate, including tempering methods. We move on to how to make the perfect ganache filling using exotic herbs, liquor enhanced truffles, and then tackle some classic nut recipes. Once you learn the basic technique to create four distinct truffles, students will then be taught how to expand upon these recipes to make endless variations of the classic.

Classic Chocolate Truffles in Milk and Dark Chocolate
Examples of white chocolate fillings will also be shown and recipe guidelines for white, milk, and dark chocolate centers will be provided and discussed.recipes, a gift box, and supplier sourcing information.

Just in time for the holidays, professional pastry chef Hayden Ramsey will give you a hands-on education in fine chocolate making. In addition to honing her skills for several years inside a chocolate shop, Hayden has a degree in Pastry Artistry from the French Culinary Institute. She has worked under Jean-Georges in New York, and received a certification of pastry artistry in France while working with Laurent Carratie in a traditional pastry shop. Hayden now is on staff at one of our favorite Santa Cruz restaurants, Gabrielle Cafe.
