SATURDAY: Basic Hard Pressed Cheese (French Tomme), blue, mozzarella, and ricotta.

Learn about pH, moisture level, correct curd textures, different methods of cheesemaking, salting, aging, use of your home milk, etc. Buy cheese making supplies at class to take home, but nothing to buy for class itself.

BRING YOUR LUNCH, no time to eat out.
