Which wheat variety to pick? Hard/Soft refers to the wheat kernel shell, which is related to the gluten level. Gluten is necessary for bread to raise, so pick a hard variety for bread and a soft variety for pastry or wheat berries for salad. White/Red refers to wheat kernel color. Both varieties will be "whole wheat" flour as the entire kernel is milled. Whole wheat white bread will be lighter in color/texture than red, but will still be a brown bread. The red has a "nuttier" flavor.
