We make aged, raw-milk, specialty cheeses using milk from our family's 50-cow Holstein dairy. We use a traditional European-style artisanal process. All our cheeses are handmade and are carefully aged for a minimum of 60 days. The cows graze during the summer season and are rBGH-free. To date, we produce two cheeses, both available in wheels of approximately 10 pounds each or in smaller custom cuts. Our traditional Dutch-style cheese is called "Schuyler," and has a thin yellow coating. Our second variety is lightheartedly named "Red Meck," a name combination referring both to its red-orange surface color and to our small hamlet of Mecklenburg. This is a French-style cheese with a red-wash surface treatment (somewhat along the lines of a Muenster).
