We can see from our fields the high peaks of the Truchas mountains, source of our water, and a long time back, of the rich soil lining the valley. The land has been under cultivation for a long time: we find pueblo pot fragments, mother of pearl and civil war buttons, horseshoes and fragments of old cultivation tools. Crops and techniques change, but the principles of land husbandry do not. We trial dozens of crops and varieties to find the ones that meet our standards, in the field, at market, and above all on the plate. Our specialty crops include wild asparagus, rhubarb, d'Espelette, Padron and Shishito peppers, Butternut squash, leeks, cima de rapa, Egyptian onions, shallots, gow choy, and more.
