We make traditional Dutch style cheeses using fresh raw milk (unpasteurized) from my family's adjacent dairy farm. All cheeses are aged a minimum of 2 months. Milk comes from a 50-cow herd of Holsteins which are grazed in-season. We produce nearly all of the winter fodder for the cows, including grain, silage and hay. Our new facility is open to the public for tours, tastings and sales, and we are conveniently located just 200 feet off NYState Route 79 (on Bergen Road), midway between Ithaca and Watkins Glen, and midway between the Seneca and Cayuga Lake wine trails. All ages welcome.
Taste the difference! Artisanally made aged cow's milk cheeses available both on-site and at select local and regional restaurants and markets. Our cheese is made using traditional Dutch methods, on-site in our new cheesery. Visitors welcome; please call ahead if possible.
