Also known by Italian gardeners as Finnocchio. Leaves have a licorice-like flavor, and celery-like leaves. Can be blanched and used as a cooked vegetable. Medicinal: Fennel is used as a carminative to relieve flatulence and colic while stimulating digestion. It is also anti-spasmodic, anti-inflammatory, and is similar to anise in calming bronchial coughs. It has estrogenic activity and is used to stimulate milk flow in nursing mothers.
