Hi there, my name is Willie Heineke and I am an environmental health major at Illinois State University. I have an idea to see if I can get the university involved in buying locally grown fruits, vegetables and other foods for the university cafeterias.
I?m very much in the idea stage and wanted to talk about whether this is feasible from your point of view. Right now, the idea is to supply or supplement the offerings in the cafeteria salad bars with locally grown produce.
Would you have some time to talk to me about some of the issues that I see and that you may have with this idea? Some of my concerns are what types of produce are available in the spring and fall, when school is in session; how much produce the school could procure from local sources like a CSA operation; costs and logistics.
