Can anyone tell me what age/weight my cattle should be at before i can slaughter them?

New to the job...

Hanging weight will be approximately 50% of live weight... sometimes more.

Steers, I usually take in at 1000lbs or less... Heifers, usually those over a year after they've had a calf, if i don't like how they've performed, size, weight, breed type, etc etc etc.
