I just harvested my 8 Quince Trees. Any good 'Quince Receipes" anyone would like to share?

I don't have a quince recipe, per se. But, my neighbor told me you can use quince as you would gelatin. If you simmer it down in a little water (cut it up and peel it first) for a few hours, it creates a gelatinous goo. I added it to my apple butter when I was making it. The recipe I followed was far too sweet for my liking and the quince added a bit of tartness that helped balance the apple butter. I was planning to make apple/pear jam and my neighbor suggested using the quince for that concoction but I didn't get around to it.
