This variety of burdock root is from Japan. Burdock is used in Japanese as well as macrobiotic cooking and is also known for its cancer fighting properties. It is a tasty root vegetable and goes well with parsnips and other root vegetables.
It is one of the herbs in the essiac remedy. It takes an entire year to grow it is started in the fall and harvested the following fall. We use a vegetable brush to scrub the roots,then slice them thinly on a diagonal to use then in soups and stir frys.
