Globe Artichoke (Cynara cardunculus ) ZONE 7 AND ABOVE
Heirloom, open-pollinated, naturally produced in NC Zone 7b
A tender perennial plant, grown for its immature flower buds. These are very easy to grow from seed, and will reward you with gorgeous silvery green plants that grow between 4' - 6' tall, that make a very nice border or specimen plant.
You will be rewarded in the late spring of the second year with the artichokes, which are actually the immature flowers of the plant. If you pick them when they are very small they can be steamed and eaten whole. When they are larger, prepare by cutting off the sharp tips of the petals, and steam. Pull the fat, fleshy base of the petals thru your teeth after dipping them in melted butter or a nice olive oil.
Start seed indoors or in the greenhouse 6 weeks before last frost date for your area. Transplant into the garden after all danger of frost has passed. Plant in full sun in well drained, well amended soil. Mulch well to help keep the soil cool and retain moisture. Cover with strawor leaves during the winter to protect the plants. Plants begin flowering in the 2nd year, and you can begin enjoying your own delicacies from the garden!
