Gratitude Gardens

Transitional farming from conventional to organic. Holistic approach to sharing & tending common local favorites. Currently we have expanded our Beaufort Rd garden to two acres. Adding 2 more locations with 1 acre each has allowed us to open a U-pick field. Here visitors are offered the opportunity to pick on halves.

In the main garden at 384 Beaufort Rd, we now have planted many varieties: broccoli, cabbage, collards, kale, peppers, 2 types of turnip, 2 types mustard, field peas, eggplant,3 types of beans and many more.

Fall is one of our favorite seasons because it allows weather that is more friendly to laborious task. We open armed welcome families, students and anyone who is interested in learning about food and sharing knowledge.

We have opened this area, for our members, to share recipes that they have developed from our produce. 

One of my favorite is Balsamic Greens and Roots:

Boil roots in sea salt and garlic to taste til they are tender (fork can penetrate easily)

Rinse with cool water and remove skin with spoon or knife

Slice into skillet with olive oil (and butter-optional), garlic and sea salt.... [more]
