GREEN MARKET KITCHEN AND CATERING uses local, sustainably-raised and seasonal products whenever possible. All food is made on premises with whole ingredients.

Local farms and ranches from whom we buy more than 60% of our product: Echo Lake Ranch (aged beef and lamb); Doubting Thomas Farms (organic pork); Renee's Eggs (chicken and duck eggs); Prairie Highland (aged Scottish Highland beef); Buechler Farms (produce); Prairie Petals (produce, herbs and flowers; Probstfield Farms (produce); Whiskey Creek (bison); Spring Prairie (chicken and pork); Yellow Bird Farms (produce); and our own local garden (herbs and produce). We use North Dakota-milled flour predominantly for our breads and pasta.

We buy artisanally-made cheese from Wisconsin and Minnesota: Widmer's; Eichten; Donnay; Carr Valley; Amablu; and Seymour Dairy.
