The Jalapeno is a small to medium-sized chile pepper that is prized for the hot, burning sensation that it produces in the mouth when eaten. Ripe, the jalapeno can be 2âÂ?“3½ inches and are green and red when fully mature. The taste is unique, hot and spicy.

It is named after the city of Xalapa, Veracruz where it was traditionally produced. Many acres of Jalapenoes are grown in Mexico, primarily in the Paloapan river basin in the north of the state of Veracruz and in the Delicias, Chihuahua area.

It is the most popular hot pepper grown. The jalapeno rates between 2,500 and 10,000 Scoville units in heat. Handling fresh jalapenos may cause mild skin irritation in some individuals. Some handlers choose to wear latex or vinyl gloves while cutting, skinning, or seeding jalapenoes.

Can be used fresh, in salsa, pickled, canned, dried and made into jelly at both red and green stage. Can be added to chili and soups to add a spicy flavor. They taste great stuffed and baked.
