Jerusalem artichoke - Beaver Valley Purple (Helianthus tuberous) one of very few native veg crops. I got mine from William Woys Weaver when I worked for in in 1999. William wrote about this in his books Pennsylvania Dutch Country Cooking and Heirloom Vegetable Gardening. I love these plants, my grandmother grow them in a large row in here garden. Helianthus spreads like mad, so give it room. It also grows 7-9' tall and has flowers that smell like chocolate. The tubers can be late fall and all winter in mulched.
