Jerusalem Artichoke (tuber) or Sunchoke. These can be eaten raw or cooked. Cooking time is not as long as for potatoes. A great substitute for potatoes if you have a restricted diet. We ship these tubers after a frost. Can be eaten without having to peel the skin.
These are not long keepers. Will last in the refrigerator approx. a week (without washing) in a plastic container. All our produce is grown by organic methods although we are not certified.
We dig each order fresh and ship unwashed in soil. These tubers can be used for eating or planting. Growing instructions will be included in the order. This photo was taken of washed tubers to better view the outside texture...almost like ginger.
