After years in the making we proudly present KATZLate Harvest Sauvignon Blanc Agrodolce Vinegar. "Agrodolce" in Italian means "sour and sweet." To create this white wine vinegar, Sauvignon Blanc grapes grown in the Suisun Valley are intentionally left on the vine for a month to six weeks longer than normal. They are almost "raisiny" from their concentration of fruit and sugars when finally harvested. This is the same tradition used for hundreds of years to make the great Sauternes of France.
The unfermented juice is blended into our proprietary white wine vinegar and slowly aged in oak barrels until it becomes our Late Harvest Sauvignon Blanc White Wine Vinegar. The finished vinegar is almost sherry-like in color and complexity with hints of vanilla, sweet apricot, fig and pear. The rich flavor is supported by a backbone of crisp acidity from the vinegar base.
The versatility of this elixir will expand the repertoire of any cook. Use it for a simple salad dressing by adding just a splash of olive oil. Try it on a pear, walnut and blue cheese salad with a splash of walnut oil. Anything with goat cheese tastes better with a touch of this Agrodolce. Mix it with a bit of mustard, black pepper, herbs and olive oil to marinate chicken for the grill or the oven.
