All of the olives for our Katz Rock Hill Ranch organic extra virgin olive oil are grown in the Suisun Valley, which flanks the Napa Valley. Rock Hill Ranch has ideal soils for growing olives. The hills surrounding the valley are full of compacted volcanic ash called tuffo, in Italian. Our olives are certified organic and grown using sustainable farming practices. The olives are handpicked and cold pressed by a Jesuit Monk who has made it his 'mission' to mill the best oils under pristine conditions.
Rock Hill Ranch Organic Extra Virgin Olive Oil contains these olive varieties: Taggiasca and Casaliva - (90%), these cultivars are native to the Ligurian and Lombardy regions of Italy respectively. Both are known for their soft and persistent fruitiness with sweet overtones producing a lush mouth feel. Leccino - (10%), this Tuscan cultivar gives the oil a green hue, classic grassiness and herbaceousness, and a spicy finish.
