King Ferry New York, on the East shore of Cayuga Lakes in the Finger Lakes region, is home to Keeley's Cheese Co. at McGarr Farms. McGarr Farms is a third-generation family owned dairy of Registered Holstein and Jersey cows. This grazing herd contributes the milk that Keeley makes into her signature cheeses. Based on washed rind recipes developed with Irish farmstead cheesemakers, Keeley's cheeses are unique to this area and depend upon local microflora for flavor development. Cheeses are aged traditionally in an underground cellar.
