Landeria Farm is a Grade A Farmstead Micro Creamery, using only the milk from our own herd of 100 Alpine Dairy Goats to produce cave aged cheeses in the old tradition. Our herd has access to 10 acres of mixed pasture and woods, bolstered by locally grown alfalfa. Our land has been pesticide, herbicide, insecticide and any other poison free for our 12 years here.
Our raw milk hard cheeses are crafted by hand in small batches and aged in our subterranean cave in wheels of from 8 to 30 pounds. Turned twice weekly, the cheeses are matured from 3 to 24 months. Our pasteurized milk French style bloomy rinded cheeses are aged from 2 to 6 weeks, developing a snowy white exterior and a creamy interior. We also produce 7 flavors of a tangy, fresh chevre from pasteurized milk.
