Lemon Balm is antibacterial and antiviral in nature. Taken in the form of tea, it can be a slightly sedative herb: lowering fever, relaxing spasms and improving digestion.
Lemon Balm makes a great addition to herbal teas, providing a lemony aroma and taste. Freshly steamed vegetables come alive when Lemon Balm is added with a touch of freshly ground pepper. For a general seasoning, it can be used with tarragon. Add leaves to fish marinades or lamb for the grill. Combine Lemon Balm with other garden herbs to make homemade herb vinegars. Freeze a sprinkle of leaves into ice cubes to serve in lemonade. It is also a natural insecticide. Dried leaves give a citrusy fragrance to potpourri.
