You can also plant perennial herbs in the fall and have beautiful well-established, rapidly growing plants come up in the spring!

Plant in the ground in early spring or in late summer after high temperatures have subsided, up until a week before first frost. Keep moist and make sure it has plenty of sunshine. Make sure to mulch to protect from the winter weather.

Lemon Balm (Melissa) is used as a flavoring in ice cream, but its most common use is to make herbal teas. It makes a refreshing iced tea, especially when mixed with other herbs like applemint or spearmint. Bruise a couple of leaves into your sweetened or unsweetened black or orange pekoe tea for a lemony flavor. Lemon Balm tea and extract are also used in fruit dishes and to make candy. The fresh crushed leaves, when rubbed on the skin, will repel mosquitoes and gnats. Readily spreads by shooting up new grow from the root and by overseeding.
